Cheddar Stuffed Mushrooms

Wonderful tasty treat! Serve as an appetizer or side dish!  Beautiful Fresh mushrooms are available at the market now visit River Valley Ranch today!  Enjoy Ingredients:

1 pound of white mushrooms

6 tablespoons unsalted butter

½ cup walnuts

½ cup fresh parsley

1 med onion

1 cup grated sharp cheddar cheese

Salt / pepper to taste

350 degree oven

Remove stems from the mushrooms and set aside.  Melt butter. With a pastry brush gently brush mushroom caps with butter.  Arrange caps, stemmed sides up on a large baking sheet (I like to cover the sheet with parchment).

  • Lightly toast walnuts and chop.
  • Finely chop parsley
  • Grate the cheese

Finely chop onion and mushroom stems, saute in remaining butter over medium high heat, until mixture is softened.  Remove from heat and stir in cheese, parsley and walnuts, add salt and pepper to taste.

Place mixture into mushrooms caps, mound slightly.  Mushrooms can be prepped up to 4 hours in advance and refrigerated.  Bake at 350 for 20 minutes, serve warm
